Ingredients
2 (6 oz each) boneless, skinless chicken breasts
4 large flour tortillas
8 oz grated cheddar cheese
1 small head roasted garlic
2 tbsp butter
2 tbsp olive oil
1 tsp Italian seasoning
1 tsp onion powder
Salt and pepper to taste
Fresh parsley (optional)
Instructions
Preheat oven to 375°F (190°C)
Season chicken breasts with roasted garlic, Italian seasoning, onion powder, salt, and pepper
Sear chicken in a skillet with melted butter and olive oil until browned on both sides
Reduce heat to low and simmer chicken until tender and fully cooked (about 20 minutes)
Mix cooked chicken with remaining roasted garlic cloves
Lay tortillas on a baking sheet and layer 2 oz cheese on each
Spoon chicken mixture onto tortillas, leaving a 1-inch border
Roll tortillas tightly, tucking ends under
Place seam side down on a parchment-lined baking sheet
Bake for 15–20 minutes until cheese is melted and bubbly
Let rest 5 minutes before slicing into halves or quarters
Notes
Rotisserie chicken or thighs may substitute for fresh breasts
Whole wheat or flatbreads work well for the tortillas
Jarred roasted garlic is a suitable shortcut; add crushed cloves if using raw
Mozzarella or pepper jack offer alternative cheese choices
Add diced tomatoes, lettuce, or salsa for extra freshness
