Ingredients

Scale

4 cups frozen hash browns (thawed and patted dry)
2 cups sharp cheddar (freshly shredded)
2 large eggs
1/2 cup green onions (finely sliced)
1 tsp garlic powder
1/2 tsp black pepper (freshly cracked)

Instructions

Grease a muffin tin with non-stick spray or oil
Pat hash browns dry with paper towels
Combine hash browns, cheese, and green onions in a bowl
Whisk eggs, pepper, and garlic powder in a small container
Add egg mixture to potato blend and coat evenly
Fill muffin tin compartments with scooped mixture
Press down firmly to compact the mixture
Bake for 25-30 minutes until golden

Notes

Use well-drained hash browns for crispiness
Thaw frozen potatoes in the microwave if short on time
Store leftovers in an airtight container for up to 3 days
