Ingredients
3 lbs Yukon Gold potatoes
2 cups heavy cream
1 cup whole milk
3 cups shredded sharp cheddar
3 cloves minced garlic
1 tablespoon fresh thyme
1 teaspoon onion powder
salt and pepper to taste
Instructions
Preheat oven to 375°F
Slice potatoes 1/8 inch thick
Whisk cream, milk, garlic, and spices
Layer potatoes in a baking dish
Pour sauce over layers
Sprinkle with cheese
Bake covered for 40 minutes and uncovered for 20 minutes
Notes

Grate cheddar from a block for better melting
