Ingredients

Chicken Breast – 1.5 lbs, cut into bite-sized pieces
Coconut Milk – 1 can (13.5 oz), full-fat
Garlic – 3 cloves, minced finely
Ginger – 1 tablespoon, freshly grated
Turmeric – 1 teaspoon
Coconut Oil – 1 tablespoon, for searing
Lime Juice – 1 tablespoon, freshly squeezed


Instructions

Heat the coconut oil in a large skillet over medium-high heat until shimmering
Add chicken pieces in a single layer and sear 3 minutes per side until golden. Remove from pan
