1 package (9 oz) of tortellini
2 tablespoons of olive oil
3 cloves of garlic, minced
1 medium onion, chopped
2 medium carrots, diced
2 cups of fresh spinach
4 cups of chicken broth
1 cup of heavy cream or coconut cream
½ cup of grated Parmesan cheese
1 teaspoon of Italian seasoning
