  • 1.5 lbs of boneless and skinless chicken thighs
  • 1 cup of honey BBQ sauce
  • 2 cups of cooked rice (white or brown)
  • 1 cup of diced bell peppers (red, yellow, or green)
  • 1/2 cup of diced red onion
  • 2 tablespoons of olive oil
  • 2 cloves of minced garlic
  • 2 tablespoons of soy sauce (or tamari for gluten-free)
  • Salt to taste
  • Pepper to taste

  • Instructions

  • Start by rinsing the chicken thighs under cold water. After patting them dry with a paper towel, cut them into bite-sized pieces.
  • In a large skillet, heat olive oil over medium heat. Once the oil is warm, add the diced onions. Sauté for about 3 minutes until they become translucent before adding the minced garlic.
  • Add the chicken pieces to the skillet, seasoned with salt and pepper. Cook for approximately 7-10 minutes, stirring occasionally, until the chicken is golden brown and fully cooked.
  • Pour in the honey BBQ sauce and soy sauce. Toss everything together and allow to simmer for about 5 minutes.
  • In the last 5 minutes, toss in the diced bell peppers.
  • Serve the rice at the bottom of each bowl and top it generously with the honey BBQ chicken. Optionally, add fresh herbs or sesame seeds.
