1.5 lbs of boneless and skinless chicken thighs
1 cup of honey BBQ sauce
2 cups of cooked rice (white or brown)
1 cup of diced bell peppers (red, yellow, or green)
1/2 cup of diced red onion
2 tablespoons of olive oil
2 cloves of minced garlic
2 tablespoons of soy sauce (or tamari for gluten-free)
Salt to taste
Pepper to taste
Instructions
Start by rinsing the chicken thighs under cold water. After patting them dry with a paper towel, cut them into bite-sized pieces.
In a large skillet, heat olive oil over medium heat. Once the oil is warm, add the diced onions. Sauté for about 3 minutes until they become translucent before adding the minced garlic.
Add the chicken pieces to the skillet, seasoned with salt and pepper. Cook for approximately 7-10 minutes, stirring occasionally, until the chicken is golden brown and fully cooked.
Pour in the honey BBQ sauce and soy sauce. Toss everything together and allow to simmer for about 5 minutes.
In the last 5 minutes, toss in the diced bell peppers.
Serve the rice at the bottom of each bowl and top it generously with the honey BBQ chicken. Optionally, add fresh herbs or sesame seeds.
