Ingredients
16 oz cottage cheese, full fat
3 large eggs
2 cups shredded mozzarella, whole milk
0.5 cup tomato sauce (no added sugar)
1 tsp Italian seasoning
0.5 tsp garlic powder
Optional: fresh basil for garnish
Instructions
Preheat oven to 375°F (190°C) and grease an 8-inch square ceramic baking dish
Combine cottage cheese, eggs, garlic powder, and half the Italian seasoning in a high-speed blender
Blend on medium-high speed for 60 seconds until smooth and airy
Pour the whipped mixture into the baking dish and spread evenly
Sprinkle shredded mozzarella over the cottage cheese layer
Pour tomato sauce over the mozzarella
Sprinkle remaining Italian seasoning on top
Bake for 25 minutes, or until golden and bubbly
