Description

A velvety, spiced cheese dip blending melted processed cheese with Rotel tomatoes, green chilies, and seasoned ground beef. Perfect for parties, game days, or casual gatherings, this Tex-Mex staple delivers richness and a kick of heat in 15 minutes.

Ingredients

Scale

32 ounces processed cheese (Velveeta blocks recommended)
2 cans Rotel tomatoes (10 ounces each)
1 pound lean ground beef (90/10 fat ratio)
1 packet halal pork-free taco seasoning
2 tablespoons water

Instructions

Brown ground beef in a skillet over medium-high heat until fully cooked
Drain excess fat from the beef
Add taco seasoning and 2 tablespoons water to the beef, mixing thoroughly
Cut cheese into 1-inch cubes and place in a slow cooker set to low
Add seasoned beef mixture to the slow cooker
Pour Rotel tomatoes (with liquid) over the mixture
Stir every 10 minutes until the dip achieves a smooth, uniform consistency

Notes

Cut cheese into uniform cubes for even melting
Adjust spice level by choosing mild/hot Rotel
Serve warm with tortilla chips
Store leftovers in an airtight container in the fridge for up to 3 days
