Description

Savory protein-packed breakfast muffins combining fresh spinach, artichoke hearts, and creamy cheeses in a golden egg-based format. A portable, balanced meal that satisfies savory cravings without complex prep.


Ingredients

8 large eggs
1/2 cup plain full-fat Greek yogurt
1/2 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 cup chopped fresh spinach
1/2 cup chopped canned artichoke hearts
1/4 tsp garlic powder
Salt and pepper to taste


Instructions

Preheat oven to 350°F (175°C)
Whisk eggs and Greek yogurt in a bowl
Fold in mozzarella, parmesan, artichoke hearts, spinach, garlic powder, salt, and pepper
Grease 12 muffin tins and pour mixture evenly
Bake for 25 minutes or until firm
