Description
A light and fluffy flatbread made with cottage cheese that’s versatile enough for breakfasts, snacks, or even dessert. Simple to make and naturally rich in protein.
Ingredients
1 1/2 cups cottage cheese (1% or 2%)
1 large egg
1/4 cup milk
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, blend cottage cheese, egg, and milk until smooth.
In a separate bowl, whisk flour, baking powder, and salt.
Gradually combine the wet and dry ingredients until just mixed.
Spoon the batter into 8 mounds on the prepared baking sheet, spacing 2 inches apart.
Bake for 20 minutes, or until golden and springy.
Notes
Use full-fat cottage cheese for the best flavor or low-fat for a lighter version.
Add a second egg for extra richness.
Substitute almond or oat milk for a lactose-free or plant-based option.
Top with savory or sweet additions like smoked salmon, honey, or cheese before serving.
Store in an airtight container for up to 3 days.
