A fusion of Mexican street corn flavors and high-protein ingredients, this casserole combines shredded chicken, fire-roasted corn, and a creamy chili-lime Greek yogurt sauce topped with crumbled Cotija cheese.
Ingredients
2 lbs chicken breast, cooked and shredded
3 cups sweet corn, fire-roasted
1.5 cups Greek yogurt, plain non-fat
1 cup Cotija cheese, crumbled
2 tsp chili powder
2 tbsp lime juice, freshly squeezed
1/2 cup cilantro, freshly chopped
Instructions
Preheat oven to 375°F
Combine shredded chicken, corn, Greek yogurt, lime juice, most of the chili powder, and half the cilantro in a bowl
Stir until chicken is coated
Transfer mixture to a 9×13-inch baking dish and spread evenly
Sprinkle Cotija cheese over the mixture
Bake for 25 minutes until bubbly and golden
Garnish with remaining cilantro after baking
Let rest 5 minutes before serving
