Ingredients
4 boneless chicken breasts (5oz each)
4 cups romaine lettuce
1 cup cherry tomatoes
1/2 cup sliced cucumber
1/4 cup fat-free Greek yogurt
2 tbsp olive oil
1 tbsp lemon juice
1 tsp dijon mustard
Salt and pepper
Instructions
Marinate chicken in 1 tbsp olive oil, 1 tbsp lemon juice, and 1 tsp mustard
Sauté chicken on medium-high heat until 165°F
Toss lettuce with 3 tbsp dressing (mix yogurt, 1 tsp lemon, 1 tsp mustard)
Top with cooked chicken and veggies
Notes
Use air-chilled thighs for richer flavor
Swap romaine for mixed greens
