Ingredients

  • 2 cups of diced cooked chicken breast
  • 1 cup of dried cranberries
  • 1 cup of diced celery
  • ¼ cup of finely chopped red onion
  • ½ cup of Greek yogurt
  • 2 tablespoons of poppy seeds
  • 1 tablespoon of honey
  • 1 tablespoon of apple cider vinegar
  • Salt and pepper to taste

  • If using leftover rotisserie chicken, shred or chop it into bite-sized pieces. If cooking fresh chicken, season and cook until done, then cool and dice.
  • Wash and chop celery and red onion.
