Ingredients

1/3 cup oil-packed sun-dried tomatoes, finely diced
1/2 cup baby spinach, chopped
1/4 cup Greek yogurt

1/4 tsp black pepper


Instructions

Preheat oven to 350°F (180°C)
Grease a muffin tin with olive oil or non-stick spray
Whisk eggs until fully combined

Divide mixture evenly into 6 prepared muffin cups
Place a small ramekin of water in the oven for steam
