Description

A tender, buttery shrimp dish cooked in a slow cooker with aromatic garlic and lemon for a hands-off, restaurant-quality meal ready in under 90 minutes.


Ingredients

1.5 lbs large shrimp, peeled and deveined (tails on or off)
1/2 cup unsalted butter
6 cloves fresh garlic, minced
3 tbsp fresh lemon juice
1/2 tsp red pepper flakes
1/4 cup vegetable broth
1/4 cup fresh parsley, chopped


Instructions

Combine butter, garlic, vegetable broth, lemon juice, and red pepper flakes in the slow cooker. Cover and cook on low for 30 minutes.
Rinse shrimp under cold water and pat dry with paper towels. Add to the slow cooker and stir to coat.
Cook on low for 20-30 minutes until shrimp are opaque and firm. Garnish with fresh parsley before serving.

Notes

Adjust red pepper flakes to taste
Use tails on for extra richness, or tails off for easier eating
Shrimp scampi retains best quality when served immediately; store leftovers in an airtight container for up to 3 days
