Description

Ingredients

Scale

2 lbs boneless skinless chicken breast
3 large sweet potatoes (left skin on for fiber)
2 cups kale or spinach
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
Salt to taste
Black pepper to taste


Instructions

Preheat oven to 400°F
Dice sweet potatoes into 1-inch cubes and toss with olive oil, smoked paprika, garlic powder, salt, and pepper
Spread potatoes evenly on a baking sheet and roast for 20 minutes
Add chicken breasts to the sheet pan and continue roasting for 15 minutes
Portion into meal prep containers with fresh greens

Notes
